Don't forget your greens! If you're like me and have a sweet tooth, bitter foods like winter greens may seem hard to swallow. Red kale is a type of Russian kale super high in vitamins K, A, and C, with a flavor more sweet than bitter. Another plus? It's leaves are more tender, though I would still recommend giving them a mini massage. Still stumped on what to do with it? One of my favorite ways to prepare is:

1. Sauté garlic and leeks or onions in the oil of your choice. 
2. Add your chopped greens post mini massage (this will help them become even more tender!) and veggie broth or a little water if you don't have any broth.
3. Cover and cook for a couple of minutes, depending on how cooked you prefer your greens.
4. Uncover and add salt, pepper, a sprinkle of chili flakes, and a splash or two of your favorite vinegar. 
5. Enjoy!
