Mushrooms are in season! Before you go foraging it should be noted that not all mushrooms are safely editable. Those that are however offer an abundance of nutrition including antioxidants, vitamins, minerals, and beta-glucans, sugars found in the cell walls of fungi shown to work wonders including providing an immunity boost and improving allergy resistance. Perhaps not a coincidence they are abundant this time of year? Eating seasonally can really pay off!
